I. LOVE. KALE.

KALE. My new favorite food. 🙂 I put this in my egg scramble in the morning and I always add the garlicky kale from the Whole Foods salad bar to my salad when they have it available. Lately, I have hopped on the green smoothie train and now have a great breakfast smoothie that I can carry with me to my early morning classes when I do not feel like cooking eggs. (I still bring two hard-boiled eggs with me to the gym though. Gotta have my eggs!)

If you want to make one of your own, here is the recipe that I have been using – thanks to Kellie Davis of www.motherfitness.com for her recipe! I tweaked it a little and love what I came up with! Here it is:

1 cup of spinach
1 cup of kale
1 cup of coconut or almond milk – your choice (I use both)
1/2 cup of peaches (ripe are best and they are in season!)
1/2 cup to 1 cup of blueberries (I love blueberries)
1/2 cup of pineapple (or strawberry, mango or a mix of all three!)
1-1/4 scoop of strawberry whey protein powder (for my protein!)
water
ice

Try it out today! You can also add peanut butter or a banana or yogurt. Let me know if you have other ideas! You can also omit the milk or the protein powder. Enjoy!
